These past few days I've gotten an overload of fresh zucchini from our garden. I knew we'd get tons this year cuz we planted quite a bit. I think maybe two or three plants is more than plenty for just two people but we wanted to store some zucchini (and squash) for the winter!! At first I wasn't sure what to do with all this zucchini and squash! I've been looking on my favorite site though (aka pinterest) for recipes and ideas and here's what I came up with!!
Making little zucchini pizzas is a great idea and I had that twice today!! It's so simple and easy to make and it's great cuz your not stuffing yourself with pizza crust, instead your filling up with fresh veggies from the garden! You just slice the zucchini put a little pizza sauce and cheese on top and bake it at 350 for around 20 min! It's been a great filler for me when I'm feeling hungry and need something "healthy" to eat!

Grilled Lemon Zucchini
Tonight I also tried grilled zucchini along with the chicken I grilled for supper!! It was sooo good! It has an amazing lemon flavor and just the perfect amount of the grilled flavor! It's definitely a new favorite!
The last think I did today with zucchini was shred 6 extra cups and froze it!! That way I'll have shredded zucchini all ready when I get the urge to make yummy double chocolate zucchini bread again!!
